The Ferrufino Family Story: Coffee as a Calling

Behind this exceptional coffee stands the Ferrufino family. Although Dr. Enrique Ferrufino is a surgeon and his wife Silvia a pediatrician, coffee is their lifelong passion. They acquired Finca Aurora in 2004 with a vision to create a place that inspires people. For the Ferrufino family, inspiration and care are the core values. They invest in fair wages, healthcare, and education for their employees, and support smaller local farmers. Their commitment to sustainability is certified by Rainforest Alliance – they use only renewable energy, protect local water sources, and preserve native forest ecosystems.

Parainema Variety & 4-Day Anaerobic Fermentation

This coffee is grown from the Parainema variety, developed in Honduras in the 1980s. It belongs to the Sarchimor family, known for its resistance to leaf rust and excellent adaptation to mid-altitude climates. It’s a compact, high-yield plant that allows for dense planting and exceptional cup quality.Finca Aurora team

To achieve its intense and complex profile, the coffee undergoes an experimental natural process:

  1. Long fermentation: After hand-picking, the cherries ferment for four days in sealed anaerobic tanks, with careful monitoring of pH, temperature, and sugar levels.

  2. Slow drying & resting: The coffee is then dried on raised beds for 35 days and rested for 14 weeks before hulling.

Finca Aurora is one of the first farms in Nicaragua with a fully integrated operation — from cultivation to final bagging — ensuring complete traceability and exceptional quality in every bean.

This coffee from Nicaragua is truly excellent, producing a rich, smooth and complex cup. The aroma and flavour profile are deep with notes of caramellized fruit, nuts and dark chocolate. It reminds me of one of my favourite coffees from Guatemala, Black Honey Coban. I love the South American coffees that have these characteristics and Bota roasting brings out the best in this particular bean. Well done!
