Guatemala Los Suspiros: A wind-kissed coffee from the highlands of Huehuetenango

Introducing Guatemala Los Suspiros, a coffee grown in the breathtaking highlands of Huehuetenango. The name “Los Suspiros” means The Sighs—a tribute to the refreshing breeze that sweeps across the farm every time you pause to admire the stunning views. This coffee embodies both deep family heritage and a bold vision for innovation.

Four generations of devotion to coffee

The story of Los Suspiros began in the 1930s when Juan Palacios founded the farm. At that time, he transported coffee to Huehuetenango by mule—an exhausting journey that took five full days.

Today, the farm is led by Axel Palacios, the fourth generation of the family, whose mission is simple: produce exceptional specialty coffee. Axel later partnered with his childhood friends, brothers Fredy and Alejandro Morales. Together they run Los Suspiros as part of their joint venture, Rosma Coffeelands, one of Guatemala’s respected specialty exporters.

Thanks to this partnership, Axel has access to top-tier processing facilities, allowing him to consistently deliver premium microlots such as this one.

This exclusive lot features 100% Villa Sarchi—a rare natural mutation of Bourbon originating from Costa Rica. Axel cultivates this variety with great care, enabling him to produce clean, distinctive single-variety coffees.

The cherries are processed using the fully washed method, ideal for the region’s stable and sunny season. Hand-picked and meticulously sorted, the cherries undergo a 24-hour fermentation before being washed with fresh water. They are then dried on patios, resulting in a clean, classic profile that beautifully showcases the best attributes of Guatemalan coffee.
