From the heart of Colombia’s most celebrated coffee-growing region Huila, this Red Bourbon microlot from Finca Las Flores is a true masterpiece – crafted with passion, precision, and innovation.Nestled in the lush mountains of Acevedo, Finca Las Flores is a family-owned farm with deep roots and a forward-thinking spirit. Since its modest beginnings in the 1990s, the farm has grown from 18,000 to over 90,000 coffee trees. In 2006, the Ayure family shifted their focus entirely to specialty coffee, and today, Jhoan Manuel Vergara Ayure leads the farm’s production of extraordinary microlots. Their varietals include Pink Bourbon, Tabi, Java, Maracaturra – and this spectacular Red Bourbon.
The Process – A Fermentation Like No Other
This microlot underwent a special fermentation process that elevates its unique flavor profile. Handpicked at peak ripeness (22–26° Brix), the cherries were first disinfected, then fermented for 12 hours in plastic bags, followed by another 24 hours in stainless steel tanks. The coffee was then dried and stabilized in hermetically sealed steel dehumidifiers until it reached a perfect 11% moisture. The result? A crystal-clear cup with refined complexity, bright fruit notes, and a beautifully smooth texture.

Each sip delivers a sweet and delicate symphony of strawberry milkshake, raspberry, and caramel, wrapped in a silky mouthfeel. The aroma is floral and fruity, with vanilla, berries, and soft strawberry notes.
