Most Mexican coffee is grown on small farms in the southern states of Chiapas, Oaxaca, and Veracruz. Arabica is the main variety, and Mexico is also one of the world’s largest producers of organic coffee.
One of the most common and gentle methods used in Mexico for producing decaf coffee is the Mountain Water Process. Green coffee beans are soaked in pure water from Pico de Orizaba, Mexico’s highest mountain. This water extracts the caffeine and flavor compounds. The water is then filtered through carbon filters that remove only the caffeine. Finally, the flavor-rich water is returned to the beans, allowing them to reabsorb their original taste, but without caffeine. Thanks to this natural, chemical-free process, the coffee keeps its original qualities, so you can enjoy a cup full of flavor and aroma anytime during the day.
